Neuhaus 73% West Africa blend cacao - Made in Belgium

This is a chocolate with a dull, smooth appearance with an orange tint. It has a nice chocolaty and woody aroma. The snap is loud and a fine smooth gradient. It has a firm moderate melt to it. The taste is velvety, creamy, sweet and pleasant taste with a nutty, spicy aftertaste. A very good overall chocolate. It is very tasty and I would definitely buy this chocolate again.

Lindt Excellence 85% cocoa - Made in France

This chocolate has a dull and very smooth with a deep dark appearance. It has a musty, smoky, bittersweet fruity aroma. It has a nice loud snap with a clean crisp gradient. It slowly melts in your mouth releasing a rich, tangy and fruity taste. It has a complex taste to it. The first taste you get a dry, almost bitter taste followed by a fruity, smoky taste. It is an excellent chocolate for Lindt and for an 85% cacao. I would recommend this chocolate to the best of friends.

Lake Champlain 75% Tanzania cocoa - Made in Vermont

This is a dark chocolate with a dull, streaky appearance. It smells rich, fruity and very chocolatey. It has moderate melt with a firm, even and waxy texture. The taste is fruity, bitter and tangy, which leaves a not so pleasant, chalky aftertaste. This chocolate is so-so and might be better with a wine or cheese. I'll never know, that's it for me with this one.

Lake Champlain 60% Grenada cocoa - Made in Vermont

This is a very mild dark chocolate. It has a beautiful dark shiny appearance. It is smooth and has a clean and crisp snap. The taste was mild, not too sweet, not too bitter. Sounds perfect, doesn't it? It was boring boring boring. I didn't taste anything fruity or nutty or anything substantial. I would not buy this chocolate again. There are too many 60% cacao chocolates out there with a lot more pizzazz then this one. I give this chocolate a 6 out of 10.

Harry London 70% cocoa - Made in Ohio

Ahhh, a nice standalone chocolate. It has a nice sheen with a few imperfections of sight but the aroma is chocolaty, rich and fruity. The snap is moderate and clean. It has a even, creamy and buttery texture. The taste is subtle, pleasant, not too sweet and not bitter at all. The aftertaste lingers which is fine by me because this is a very good chocolate. I would buy again and again. But I will say I thought the name was misleading because this chocolate is made in Ohio and the name insinuates London. But it tastes good all the same.

Michel Cluizel Tamarina 70% Sao Tome cacao - Made in Paris

This is one of the best chocolates I have tasted. It is creamy, has an even velvety melt. It is definitely the best chocolate that I have tasted from the Sao Tome region. It has a fruity taste with a licorice aftertaste. Overall a great chocolate.

Lake Champlain 70% Sao Thome cocoa - Made in Vermont

This chocolate has a dull but a smooth appearance. The gradient is slightly rough, pitted but it has a rich, woody smell. It has a complex taste that is a little on the bitter side. It is subtle and is nothing outstanding. The aftertaste lingers and is not that pleasant. Overall, I would say this chocolate is boring.

This is a dull, dark chocolate with a yellow tint. It has tobacco and fruity aroma with wood notes. It is not too bitter and not too sweet. It has a pleasant chocolaty taste with a delicate aftertaste. Very nice.

Chocovic Guyave 71% Grenada cocoa - Made in Spain

This chocolate has a dull but smooth appearance. It has soft clean snap with a slightly rough and uneven gradient. The melt is slow to moderate and the texture is thick and creamy. It is an interesting chocolate because it has a fruity forward taste and a sweet coffee back flavor. It is also dry and bitter but in a subtle way. The aftertaste is pleasant but too short. This is a very tasty chocolate. I give this one a 8.3 out of 10.

Sterling Collection 90% Ecuador cocoa - Made in Belgium

This is a harsh, strong and bitter chocolate. I was suprised because I have tasted truffles made by Sterling that are very nice. It has a wonderful smell and a nice snap. The gradient is streaky and crumbly. The most unfortunate thing about this chocolate is the lingering aftertaste. I would not buy this chocolate again.

Valrhona Caraibe 66% Carribbean cacao - Made in France

This chocolate has a smooth appearance with a deep dark color. It has a coffee, chocolaty aroma with a loud snap and a smooth gradient. It has a nice clean melt with fruity, smoky taste. Michel Cluizel Mangaro 72% Madagascar cacao - Made in Paris

This is a very nice chocolate. It has a bittersweet aroma and the taste is citric and tangy. It is not too bitter and not too sweet, a nice well balanced chocolate. It has a pleasant aftertaste that lingers. This chocolate would be good as a standalone or with a nice wine or cheese. I would buy this chocolate again and this is one of my favorites.

Michel Cluizel Los Ancones 72% Santo Domingo cacao - Made in Paris

This chocolate is too shiny and is unnatural. It has a dark purple tint to it and a nice tobacco aroma. The snap is loud but it is full of air holes. It melts slowly and has a creamy, firm texture. It tastes like tobacco, it is very harsh, strong, tangy and bitter. The aftertaste is bitter and has a burned taste. This is not a good chocolate to me and I would not buy again.

Michel Cluizel Concepcion 72% Venezuela cacao - Made in Paris

This chocolate is very shiny because it has colouring agents for decorations. I could taste an artificial taste right away. There was an tobacco aroma to this chocolate. The snap was nice and loud but the gradient was full of air holes. The melt was very slow. There was a dark fruit, strong taste that was not bitter. It had a pleasant aftertaste. Overall, a very good chocolate.

A. Korkunov Milk Chocolate - Made in Russia

This chocolate is delicious. It has plentiful raisins and hazelnuts. It is not a good chocolate for a taste test but nevertheless, it was really good and enjoyed by all of my taste testers.

Baron dark chocolate - Made in Poland

This is a dark chocolate with a milk chocolate taste. The label doesn't say how much cacao is in here but I would guess no more than 60%. It is a sweet chocolate with a nice sheen and a milky aroma. It would make a nice Easter chocolate. It is sweet and not bitter at all. I would buy this chocolate again but not if I am looking for 'dark' chocolate.

Trader Joe's Swiss 71% cocoa - Made in Switzerland

This chocolate has a dull sheen with a deep orange tint. It has a burned chocolaty aroma. This one has a slow melt to it as well as some of the other Swiss chocolates. It has a medium to subtle taste with a clean and creamy texture. The aftertaste is pleasant but too short. I would buy this chocolate again.

Villars Chocolat Noir 72% cocoa - Made in Switzerland

This chocolate has a shiny sheen and has a chocolaty with a smoky floral aroma. It has a nice clean snap. The gradient is rough. This chocolate has a slow melt with a clean, not too sweet taste. It is rich and creamy but has a slightly artificial, quickly disappearing aftertaste. I would probably buy this chocolate again.

Perugina Nero 70% cacao - Made in Italy

This chocolate has a dull sheen and a dark color with a pinkish tint. It has a chocolaty, smoky and a burned aroma. The snap was soft and the gradient was smooth but crumbly. This chocolate has a wonderful melt. The texture is creamy and velvety. The taste is not too sweet, not bitter at all, buttery and rich. The aftertaste is a little short for my liking but it was pleasant. I would definitely buy this chocolate again. This is one of my favorites.

Grands Crus by Caffarel 70% cacao from Ghana - Made in Italy

The smell of this chocolate is superb. This is a strong chocolate for only having 70% cacao in it. It has a tabacco taste to me with a hint of floral. Not one of my favorites.

Le Noir Amer by Valrhona 71% cacao - Made in France

The fruity and floral tastes are very rich flavors with this chocolate. It has a strong aftertaste but is not bitter. Very interesting taste. The gradient and the snap is excellent. This is a standalone chocolate.

Hachez 88% cocoa from South America - Made in Germany

This chocolate has a very high cocoa content but you would never know it to taste it. It has a really smoothe, nice flavor to it. It has a nice sheen with a tobacco aroma. The snap is moderate and the gradient is splintery. This chocolate has a slow melt with a nice strong aftertaste. Very nice chocolate. I would buy this chocolate again.

This chocolate has a strong aftertaste to it, almost like a sour taste. It is not of my favorites. It has a different kind of taste.

Droste Pastilles 72% cocoa - Made in Holland

This chocolate has a nutty flavor that is not bitter. It is a strong chocolate with a nice smell and snap. This would be good after a heavy meal for dessert. This chocolate is definitely one of my favorites.

Domori GEM 85% cacao - Made in Italy

This chocolate is not bitter but it is very strong. The sugar crystals help with the flavor. This would be good with a good wine or cheese. I tasted this chocolate when I was still tasting milk chocolates. Now that I am tasting only dark chocolates, I will try this chocolate again. It probably will not be so strong.

Grands Crus Cuba 70% cacao - Made in Cuba

This chocolate has a tobacco flavor to it. It has a muted sheen with a purple tint. It has a nice snap and a rough gradient along the broken edge. It has a pungent smell, almost a burning smell. It has a heavy bitter taste with a kick. It is very rich, creamy and smoothe. This chocolate would be better with a cheese or wine and not as a standalone.

Cocoa D' Arriba 77% cocoa - Made in Germany

This is an interesting chocolate, orange combination. The chocolate is very creamy but the orange flavor tastes bitter to me. I would like to try this chocolate without the orange flavor in it. This chocolate has a nice snap to it and a nice smell.

Noirissime 99% cacao - Made in France

This is a very strong tasting chocolate. It is not dry or bitter. I don't hate it but I think I need to taste chocolates that don't have as much cocoa in them and work my way up to this chocolate. I definitely will try this chocolate again in the near future.

Lusty 55% cocoa - Made in New Zealand

This is a dark chocolate with a milk chocolate taste. Because of the sugar added, this makes this chocolate higher in calories than other chocolate bars with a higher cocoa content.

Monday, April 2, 2007

Evasions de chocolat NOIR 64% cacao - Made in France

This is a chocolate that has a hint of vanilla and crunchy pieces of bitter orange. This is a good chocolate to eat by itself. It is a dry chocolate but not too dry with a good taste that is not too sweet or bitter. I would definitely buy this chocolate again.

Scharffen Berger nibby bar 62% cacao - Made in California

This chocolate is very good. It contains nibs so that is an extra bonus. This chocolate can be enjoyed by itself anytime.

The first taste of this chocolate is bitter but after tasting it a little more, it is very rich and creamy. This chocolate would be good with a strong cup of coffee after a heavy meal.
